Slice & muddle lime with sugar. Add cachaça, shake (a canning jar with lid works well), and drink!
Offered in partnership with Novo Fogo Cachaça - Learn more about their distillation process and here is a link on the company's support of the restaurant community. Novo Fogo is a 100% organic, zero-waste cachaça distillery in the south of Brazil. Located next to the Atlantic Rainforest, an endangered and protected land, our mantra as a company is to preserve and protect our surrounding environment. Along with producing one of the best spirits in the world, we also started our own reforestation non-profit in Brazil to cultivate and plant endangered native trees, and recently announced that we are a carbon negative company.
Goat Cheese Spread: Appetizer Recipe
This recipe is VERY forgiving and can be made an unlimited number of ways. It's based on a recreation of a tapa Rene and I had in Barcelona 5 years ago at El Xampanyet. We were there, having one of the best meals of our lives, trying to taste as many things as possible. We casually ordered this, bright red things, unbeknownst to us that our world was about to change. What they ended up being, were peppadew peppers stuffed with something similar that this recipe makes.
Quantities are approximate
1/4 c. Goat Cheese
1/4 c. yogurt (mascarpone, sour cream, cream cheese etc. easily can be used as a substitute )
1tsp. Lemon Juice (more or less to taste. Mild vinegar can be used as well: Sherry/white balsamic/modena. If you use vinegar you will nee less)
2tsp- 1 Tbsp Olive oil
Salt and pepper to taste
Mix all ingredients in a bowl and adjust lemon juice, oil, salt and pepper to taste. The mixture should be thick and spreadable, but not runny. Put on a plate and enjoy with crudite ingredients you have on hand: Apples, Pear, cured meats, bread, radishes, peppadew peppers, olives, Etc. Feel free to also add fresh herbs such as Golden Oregano, oregano, thyme, mint, chives, parsley.
Be creative!

Many, if not all of the recipes made have been a direct influence of having worked in the hospitality industry for over 2 decades, as well as benefiting from the creative mind of her partner Rene Gutierrez. Rene is the kitchen director at a small award winning cocktail bar called The Doctor's Office in Seattle, found @TDOseattle. Joanna currently manages that account as well.
